摘 要:为了解山西南部旱地小麦品种品质,研究了13个运旱系列小麦品种的高分子量谷蛋白亚基(HMW-GS)组成及品质性状。结果表明,13个小麦品种中共检测出7种HMW-GS,Glu-A1位点上有3种亚基,Null占84. 62%,1和2*各占7. 69%; Glu-B1位点上有2种亚基,7+8、7+9出现频率相当; Glu-D1位点上有2种亚基,5+10占76. 92%,2+12占23. 08%。亚基组合类型共5种,其中优势亚基组合为N、7+8、5+10和N、7+9、5+10,分别占38. 46%和23. 08%。运旱系列小麦主要携带优质亚基5+10,缺少优质亚基17+18。因此,在该区域旱地小麦品质育种中,在保持原有优质亚基的同时应该引进优质亚基2*、17+18和14+15。品质性状分析结果表明,13个小麦品种的蛋白质含量介于11. 60%~13. 82%,湿面筋含量介于24. 2%~32. 3%,容重介于789~810 g/L,沉降值介于30. 2~50. 1 m L,形成时间介于1. 8~4. 5 min,稳定时间介于3. 0~11. 5 min,形成时间以晋麦57最高,其他指标均以运旱618最高。In order to understand the quality of dryland wheat varieties in southern Shanxi,the HMW-GS composition and quality properties of 13 Yunhan series wheat cultivars were analyzed.The results showed that there were 7 types of HMW-GS in 13 Yunhan series wheat cultivars,there were 3 types of HMW-GS in Glu-A1 locus,Null accounted for 84.62%,1 and 2*accounted for 7.69%,respectively;there were 2 types in Glu-B1 locus,frenquency of 7+8 was equivalent to 7+9;there were 2 types in Glu-D1 locus,5+10 accounted for 76.92%,2+12 accounted for 23.08%.There were 5 kinds of subunit combinations,the preponderant subunit combination were N,7+8,5+10 and N,7+9,5+10,account for 38.46%and 23.08%,respectively.The Yunhan series wheat cultivars carried high-quality subunit 5+10,but lacked high-quality subunit 17+18.Therefore,high-quality subunits 2*,17+18 and 14+15 should be introduced at the same time to maintain the original high-quality subunits for the dryland wheat quality breeding.The quality traits analysis results showed that the protein content,wet gluten content,bulk density,settlement value,formation time and stable time of 13 Yunhan series wheat cultivars were 11.60%-13.82%,24.2%-32.3%,789-810 g/L,30.2-50.1 mL,1.8-4.5 min and 3.0-11.5 min,respectively.The formation time was the highest in Yunhan 618,the other indexes were the highest in Yunhan 618.
