摘  要:塑料包装以其阻隔、耐介质、耐蒸煮性等良好性能被用于固态、液态等多种食品的包装,在一些领域已经取代了传统的金属包装,还可美化商品外观,降低生产成本,延长保质时间有,但其也存在一定缺陷,如材料的阻隔性不高,对食品中的活性物质影响显著,同时过高氧气透过量会引起袋装食物受潮、变质,破坏食品口感和质量,因此氧气透过量测试的准确性对于食品材质研制和开发具有重要的意义。详述了两类常见的透气性测量方法——压差法和等压法(库仑计法)的测试方法、优缺点及这两种方法的机理,并对两类方法进行了全面对比,以便为实际使用中进行合理选择提供参考。Plastic packaging has been used in solid and liquid food packaging because of its good properties such as barrier,medium resistance and cooking resistance.It has replaced traditional metal packaging in some fields.It can beautify the appearance of commodities,reduce production costs and prolong shelf life.However,it also has some defects,such as no barrier of materials.High oxygen permeability can cause dampness and deterioration of bagged food,and destroy the taste and quality of food.Therefore,the accuracy of oxygen permeability measurement is of great significance for the development of food materials.In this paper,two kinds of common methods for measuring permeability of air are described in detail:differential pressure method and equivalent pressure method(coulombarometer method),so as to provide reference for making reasonable choices in actual use.
