不同包装材质对泡菜脆口萝卜产品货架期的影响

摘　　要：文章通过Q10方法,试验了透明袋、镀铝袋及铝箔袋对泡菜脆口萝卜产品货架期的影响。试验表明不同种类包装材质产品在不同储存温度条件下产品理化指标pH、总酸以及微生物学指标细菌总数均保持稳定。同种包装材质,产品储存温度越高,产品货架期越短;不同包装材质的脆口萝卜产品在流通环境中,铝箔袋产品有324天的货架期,比镀铝袋以及透明袋产品有更长的货架期,更能保持产品货架期感官品质。Through Q10 method,test the effect of transparent bag,aluminizing bag and aluminum foil bag on the shelf life of the crispy pickled radish products.The result shows that the pH values of physicochemical and microbiological indexes,total acids and total bacterial count are stable under different storage conditions.With the same packaging material,the higher the storage temperature of the products,the shorter the shelf life of the product.It is concluded that in the circulation environment of crispy pickled radish products,the shelf life of aluminum foil bagged product is 324 days,which is longer than the shelf life of aluminizing bagged and transparent bagged products.It provides important data support for maintaining product's sensory quality of shelf life.
