摘 要:本试验旨在研究持续热应激对黄羽肉鸡生长性能、肉品质和血液指标的影响。选取35日龄的雄性黄羽肉鸡192只,随机分为常温组和持续热应激组,每组8个重复,每个重复12只鸡。常温组环境温度为26℃,持续热应激组则给予34℃的持续热应激,相度湿度为55%左右,试验共14 d。结果显示:与常温组相比,持续热应激显著降低了黄羽肉鸡的终末体重、平均日增重和平均日采食量(P<0.05),但没有显著影响肉品质指标(P>0.05)。热应激第3天,持续热应激组血清谷草转氨酶(AST)活性显著高于常温组(P<0.05);热应激第7天,持续热应激组血清AST、碱性磷酸酶(AKP)活性和体核温度显著高于常温组(P <0.05);热应激第14天,持续热应激组血清胆碱酯酶(CHE)活性显著低于常温组(P<0.05),谷丙转氨酶(ALT)、AST、AKP、乳酸脱氢酶(LDH)和磷酸肌酸激酶(CPK)活性显著高于常温组(P<0.05)。综上所述,持续热应激会降低黄羽肉鸡的生长性能,提高反映肝功能损伤相关酶的活性,但未显著影响肉品质。This experiment was to study the effects of persistent heat stress on growth performance, meat quality and blood indexes of yellow-feathered broilers. One hundred and ninety-two 35-day-old male yellow-feathered broilers were randomly divided into normal temperature group and persistent heat stress group with 8 replicates per group and 12 chicks per replicate. The environment temperature of normal temperature group was given 26 ℃, while the persistent heat stress group was given 34 ℃ persistent heat stress, and the relative humidity all about 55%. The experiment lasted for 14 days. The results showed as follows: compared with the normal temperature group, persistent heat stress significantly reduced the final body weight, average daily gain and average daily feed intake ( P <0.05), while there was no significant effects on muscle quality indexes ( P >0.05). On the 3rd day of heat stress, the activity of serum aspartate aminotransferase (AST) of persistent heat stress group was significantly higher than that of normal temperature group ( P <0.05); on the 7th day of heat stress, the serum AST and alkaline phosphatase (AKP) activities and rectal temperature of persistent heat stress group were significantly higher than those of normal temperature group ( P <0.05); on the 14th day of heat stress, the activity of cholinesterase (CHE) of persistent heat stress group was significantly lower than that of normal temperature group ( P <0.05), while the activities of serum alanine aminotransferase (ALT), AST, AKP, lactic dehydrogenase (LDH) and creatine phosphokinase (CPK) of persistent heat stress group were significantly higher than those of normal group ( P <0.05). In summary, persistent heat stress can reduce growth performance, improve the activities of some enzymes that reflects liver function injury, however, there is no significant effects on meat quality of yellow-feathered broilers.
