摘 要:建瓯白笋属于毛竹笋,其肉质鲜嫩、通体洁白、口感脆甜。以建瓯白笋及其竹叶为原料,采用酚抽提法提取竹笋总蛋白,得到了2个质量浓度为11.13和9.98 mg·mL^(-1)的蛋白样品,并进行了总蛋白的双向电泳实验(pH=3~10)。结果表明,建瓯白笋及其竹叶中蛋白种类丰富,其蛋白点数分别为1 626个和900个,竹笋多于竹叶,也多于杭州余杭毛竹冬笋(1 024个);等电点主要集中在pH=5~7,建瓯白笋及其竹叶蛋白点分别为1 102个和589个,占总蛋白点数的67.8%和65.4%;建瓯白笋及其竹叶蛋白的分子量均主要分布在18~66 kDa,蛋白点个数分别为1 083(66.6%)和672(74.7%),以35~45 kDa范围最为集中。因此,建瓯白笋及其竹叶是一种潜在的天然优质植物蛋白源。Jianou Bai Moso bamboo shoots appear white.They taste fresh,tender,crisp and sweet.The total protein were extracted from Jianou Moso bamboo shoots and leaves by phenol extraction method,and two protein samples with a concentration of 11.13 and 9.98 mg·mL^-1 were obtained,then they were analyzed by the two-dimensional electrophoresis(pH=3-10).The results showed that the Jianou Moso bamboo shoots and leaves had abundant proteins,and the shoot and leaf protein spots reached 1 626 and 900 respectively.The protein spots of Jianou Moso bamboo shoots were also more than the winter Moso bamboo shoots(1 024)from Yuhang in Hangzhou.The isoelectric points were mainly concentrated at the pH of 5-7,and the protein of the bamboo shoots or leaves had protein spots of 1 102 or 589,accounted for 67.8%or 65.4%.Their relative molecular mass were mainly ranged at 18-66 kDa with protein spots of 1 083(66.6%)or 672(74.7%),and the most concentrated range was 35-45 kDa.Thus,the Jianou Bai Moso bamboo shoots and leaves might be potential plant protein sources with a high quality.
