摘  要:试验旨在研究土豆渣发酵饲料对小尾寒羊生长性能和肉品质的影响。选择150只体重为22 kg左右小尾寒羊羔羊,随机分为3组(对照组、发酵Ⅰ组和发酵Ⅱ组),每组50只,围栏圈舍舍饲。对照组饲喂常规日粮(精料和牧草),发酵Ⅰ组和发酵Ⅱ组饲喂精料和不同配方的土豆渣发酵饲料。预饲期为7 d,正式试验期为65 d。饲养试验结束后进行屠宰,采集背最长肌用于相关肉品质指标分析。结果表明:各组别生长性能指标均无显著性差异(P>0.05),就日增重而言,发酵Ⅰ、Ⅱ组相比对照组表现出良好的优势;屠宰性能指标中,宰前活重、胴体重、屠宰率、背膘厚度及眼肌面积均无显著差异(P>0.05);物理指标中,发酵Ⅰ、Ⅱ组显著提高了熟肉率(P<0.05),其他指标均无显著差异(P>0.05);各组别肌肉水分、粗蛋白质及粗脂肪均无显著差异(P>0.05)。采用土豆渣发酵的饲料饲喂的小尾寒羊,其生长性能可达到常规日粮饲喂的效果,综合发酵饲料对熟肉率、粗粗白质、粗脂肪、嫩度、系水力及肉色泽的影响,发酵饲料具有改善肉品质的趋势,发酵饲料组间发酵Ⅰ组略优于发酵Ⅱ组。This study was conducted to determine the effects of the potato dregs fermentation feed on the growth performance and mutton quality of Small Tail Han sheep. A total of 150 sheep were selected and assigned randomly to three groups, including control group, fermentation groupⅠand fermentation group Ⅱ. There were fifty sheep in each group. Fermentation group Ⅰ and Ⅱ were fed the different fermentation feeds on the basis of concentrate, control group was fed the basal diet. The pre-feeding period was 7 d. The experiment lasted for 65 d. Slaughter was done at the end of feeding experiment, and the longissimus dorsi muscle was used to analyze the meat quality index. The results showed that the growth performance indicators were not significantly different between three groups(P>0.05), however, compared with control group, average daily gain(ADG) of experimental groups were improved;slaughter weight, carcass weight, dressing percentage, back fat thickness and loin eye area in the slaughter performance showed no significant difference among three groups(P>0.05). The results of physical properties showed that the cooked meat rate of fermentation group Ⅰ、Ⅱ were significantly higher than control group(P<0.05). The another detection indexes had no significant difference among three groups(P>0.05). Water, crude protein and crude fat in nutrient composition had no significant difference among three groups(P>0.05). In conclusion, for the sheep feeding the potato dregs fermentation feed, the feeding effect can be achieved or closed to the control group. Comprehensively considering the indices, including the cooked meat rate, crude protein, crude fat, the meat tenderness, water holding capacity and color, the fermentation feed had a tendency to improve the meat quality. Fermentation group Ⅰ is slightly better than fermentation group Ⅱ between fermentation feed groups.
