摘  要:大蒜Allium sativumL.(Garlic)属百合科葱属,属药食同源的植物,以鳞茎入药,应用广泛。本文主要综述了大蒜提取物中能够起到增强免疫活性物质的成分,如:大蒜多糖、大蒜素、微量元素等。以及其通过提高免疫器官,免疫细胞以及免疫活性物质的功能进而提高动物免疫系统在特异性免疫以及非特异性免疫方面的作用机制,指出了大蒜能够有效的增强动物机体对抗细菌病毒等的免疫应答效应,增强机体免疫能力。Allium sativum L.(Garlic) belongs to the Allium genus of the family Liliaceae and is used as both medicine and food. This paper reviews the ingredients of garlic extract which can enhance immune active substances, such as garlic polysaccharide, allicin and trace elements, and how they improve the specific and non-specific immunity of animal immune system by improving the function of immune organs, immune cells and immune active substances. It is pointed out that garlic can effectively enhance the immune response effect of animal body against bacterial virus and therefore enhance the immunity of the body.
