摘 要:目的探讨沙棘甾醇抗油脂氧化的作用,并与维生素C、维生素E、二丁基羟基甲苯、β-胡萝卜素、β-谷甾醇和豆甾醇的抗油脂氧化作用相比较,且将沙棘甾醇与维生素C或二丁基羟基甲苯复配,研究它们的协同抗油脂氧化作用。方法采用Schaal烘箱贮藏法,以油脂的过氧化值及氧化抑制率为评价指标进行相关分析。结果沙棘甾醇对油脂的氧化抑制率为5.22%~37.54%,随着沙棘甾醇剂量的递增,对油脂的氧化抑制率也逐步提高。沙棘甾醇对油脂的氧化抑制率高于β-胡萝卜素、β-谷甾醇和豆甾醇,低于维生素C、二丁基羟基甲苯和维生素E。沙棘甾醇与维生素C或二丁基羟基甲苯以2:1、1:1、1:2复配,对油脂的氧化抑制率较沙棘甾醇提高19.61%~122.08%,较维生素C提高2.32%~38.52%,较二丁基羟基甲苯提高0.36%~49.23%,沙棘甾醇与维生素C复配比为1:2时对油脂的氧化抑制率最高。结论沙棘甾醇具有明显的抗油脂氧化作用,其抗氧化强度随着剂量的增加而明显递增,呈正向剂量依赖效应。抗油脂氧化的强度:维生素C>二丁基羟基甲苯>维生素E>沙棘甾醇>豆甾醇>β-胡萝卜素>β-谷甾醇。沙棘甾醇与维生素C或二丁基羟基甲苯复配具有协同增效的能力,尤以沙棘甾醇与维生素C复配比为1:2时效果最为显著。Objective To investigate the anti-oxidation of seabuckthorn sterols and compare them with the antioxidant effects of vitamin C,vitamin E,dibutylhydroxytoluene,β-carotene,β-sitosterol and stigmasterol,and to compare seabuckthorn sterols in different proportions. Compounded with vitamin C and dibutylhydroxytoluene to study their synergistic antioxidant effects.Methods The Schaal oven storage method was used to analyze the lipid peroxidation value and oxidation inhibition rate.Results The inhibition rate of seabuckthorn sterols on oil was 5.22%~37.54%.With the increasing dose of seabuckthorn sterol,the inhibition rate of oil oxidation was gradually increased. Its oxidation inhibition rate was higher than that of β-carotene,β-sitosterol and stigmasterol,but lower than vitamin C,dibutylhydroxytoluene and vitamin E.Seabuckthorn sterols were compounded with vitamin C and dibutylhydroxytoluene at 2: 1,1: 1,1: 2,respectively.The inhibition rate of lipid oxidation was 19.61%~ 122.08%,higher than that of seabuckthorn sterol,and 2.32%~ 38.52% higher than vitamin C.compared with dibutylhydroxytoluene increased by 0.36%~49.23%,especially when the ratio of seabuckthorn sterol to vitamin C was 1: 2,the inhibition rate of oil oxidation was the highest.Conclusion Seabuckthorn sterol has obvious anti-oxidation effect on oil,and its antioxidant strength increases with dose increasing,showing a positive dose-dependent effect.Antioxidant strength to oil: vitamin C>dibutylhydroxytoluene>vitamin E>sea buckthorn sterol>stigmasterol>β-carotene>β-sitosterol.The combination of seabuckthorn sterol and vitamin C and dibutylhydroxytoluene has synergistic ability,especially the ratio of seabuckthorn sterol to vitamin C is 1: 2.
