摘 要:以东莞特有的莞香茶为研究对象,在体外模拟胃液环境中(pH=3,37℃)研究不同冲泡条件对莞香茶清除亚硝酸盐能力的影响,并比较其与八种常见发酵/半发酵茶清除亚硝酸盐的能力。结果表明,莞香茶清除亚硝酸盐能力显著——在最佳冲泡条件(温度为100℃、时间为5min)下,其对亚硝酸盐的清除率为74.80%,优于其他8种发酵/半发酵茶。该工作为莞香茶的科学饮用提供理论依据,同时也为莞香茶的开发与推广奠定理论基础。The nitrite-scavenging ability of Guan Xiang tea was studied under simulate gastric juice (pH=3,37 ℃) in vitro.The effects of brewing conditions on the clearance rate were investigated.Under the optimized conditions,the clearance capacity of Guan Xiang tea was compared with the other eight types of fermented/semi-fermented tea.The results showed that compared to the other types of fermented/semi-fermented tea,Guan Xiang tea showed the best ability on nitrite scavenging under the optimum conditions (brewing temperature was 100 ℃,and brewing time was 5 min) with clearance rate of 74.80%.This work not only provided theory gist for scientific drink of Guan Xiang tea,but also offered a theoretical basis to its development and promotion.
