摘  要:为优化桔梗切片的远红外干燥工艺,以干燥温度、切片厚度和辐照高度为试验因素,将平均干燥速率、复水比和色差值作为试验指标,利用响应曲面法研究试验因素对桔梗远红外干燥工艺的影响,建立二次多项式回归模型进行干燥工艺优化。结果表明:最优参数为干燥温度60℃、切片厚度3mm、辐照高度240mm,此时对应的目标参数分别为平均干燥速率0.718%/min、复水比7.537、色差值9.286。In order to optimize the far-infrared drying process of platycodon grandiflorum slices,the drying temperature,slice thickness and irradiation height were used as experimental factors,and the average drying rate,rehydration ratio and color difference were used as experimental indicators.The response surface method was used to study the experimental factors on carrots.The influence of the infrared drying process,the regression model of the quadratic polynomial is established,and the drying process is optimized.The results show that the optimal parameters are:drying temperature 60 ℃,slice thickness 3 mm,irradiation height 240 mm.The corresponding target parameters are:average drying rate 0.718,rehydration ratio 7.537,color difference 9.286.
