摘　　要：胶原蛋白是动物结缔组织中的主要成分,同时其在医学、组织工程、化妆品、食品等领域有广泛应用。但由于疯牛病(BSE),口蹄疫(FMD)等疫情的爆发使陆生源动物组织获取胶原蛋白及其多肽的途径受阻,而新的替代来源——海洋资源正在积极开发中。本文简要介绍了海洋胶原蛋白结构及特点,提取方法、应用,以及胶原蛋白活性肽的特点、制备、活性及相关应用。Collagen is the main component of animal connective tissue, and it is widely used in the fields of medicine, tissue engineering, cosmetics and food. However, due to the outbreak of BSE, foot-and-mouth disease ( FMD) and other diseases, the access of terrestrial animal tissues to collagen and its peptides is blocked, and new alternative sources of Marine resources are being actively developed. This paper briefly introduces the structure and characteristics of collagen, extraction method and application, as well as the characteristics, preparation, activity and related application of collagen active peptide.
