摘 要:为了探讨外源乙烯利和乙醇处理对紫果百香果的催熟效果,以八成熟的紫果百香果为材料,研究了不同浓度的乙烯利和乙醇处理对紫果百香果采后果实色度和可溶性固形物含量的影响,以确定适宜的处理浓度;同时研究了适宜条件乙烯利或乙醇处理对百香果膜透性、丙二醛含量的影响。结果表明,在15℃条件下,不同浓度的乙烯利能够显著提高百香果果皮的红绿度(a*值)和果汁的可溶性固形物含量,对百香果均有催熟效果,其中,600mg/kg乙烯利的催熟效果最好;低浓度的乙醇对百香果无显著的催熟效果,45%乙醇的催熟效果较好;600mg/kg乙烯利和45%乙醇均能显著增加百香果果皮的细胞膜透性和丙二醛含量,其中,600mg/kg乙烯利的催熟效果最好。To study the ripening effect of exogenous ethylene and ethanol on passion fruit(Passiflora edulis Sim.), the effects of different concentration of ethephon and ethanol treatments on the color and soluble solids content were investigated under low temperature storage(15 ℃, RH 85%). Moreover, the effects of ethylene or ethanol treatment on the membrane permeability and malondialdehyde(MDA) content of passion fruit were studied. The results showed that different concentrations of ethephon could significantly increase the a* value of fruit peel and soluble solids content of fruit juice under low temperature storage. The ripening effect of 600 mg/kg ethephon was the best, while low concentration ethanol had no significant ripening effect on passion fruit, 45% ethanol had better ripening effect. Further study found that 600 mg/kg ethylene and 45% ethanol could significantly increase the cell membrane permeability and MDA content of passion peel, and 600 mg/kg ethephon had the best ripening effect.
