摘  要:[目的]本试验旨在研究构树作为粗饲料来源对黄淮白山羊瘤胃发酵特性、消化代谢、生产性能及肉品质的影响。[方法]选择40只健康、体质量接近、5月龄的黄淮白山羊,设计构树占粗饲料的质量分数分别为25%(BP25)、50%(BP50)、75%(BP75)以及0(BP0),共4组,每组设5个重复,试验期60d。[结果]添加构树各组瘤胃pH值与BP0组均无显著差异(P>0.05),而NH3-N浓度均显著高于BP0组(P<0.05),BP25、BP50、BP75较BP0组分别增加21.30%、25.18%和38.92%;BP75组瘤胃微生物蛋白(MCP)含量比BP0组增加22.82%,BP25、BP75组MCP含量与BP0组间差异显著(P<0.05)。各处理组酸性洗涤纤维(ADF)表观消化率之间无显著差异(P>0.05),BP25组各养分表观消化率均高于BP50、BP75组,其中干物质表观消化率与BP75组间差异显著(P<0.05),中性洗涤纤维(NDF)表观消化率与BP50组间差异显著(P<0.05);BP25组各营养物质表观消化率较BP0组无显著差异(P>0.05)。添加构树各组进食氮、可消化氮、沉积氮含量均显著高于BP0组(P<0.05),BP25组的氮利用率最高,且与其他各处理组差异显著(P<0.05)。BP25、BP50组试验羊平均日增重(ADG)、胴体质量及屠宰率均显著高于对BP0(P<0.05)。随着构树添加量增加试验羊的肌肉嫩度和系水力显著提高(P<0.05),BP50组的熟肉率最高且与其他处理组间差异显著(P<0.05);BP50组试验山羊后腿肌肉肉色a*值和背最长肌亮度L*值均显著高于其他组(P<0.05)。[结论]当构树与青贮玉米的搭配占比为25%~50%时,更有利于促进黄淮白山羊瘤胃发酵和提高氮利用率,从而提高生产性能和改善羊肉品质。[Objectives] The purpose of this experiment was to study the effects of Broussonetia papyrifera (BP)as a crude feed source on the rumen fermentation characteristics,digestion and metabolism,production performance and meat quality of Huanghuai white goat.[Methods] Forty goats(5 months of age)were randomly assigned to four treatments:25% BP(BP25 ),50% BP(BP50 ),75% BP(BP75 )and BP 0(without adding BP),respectively,with 5 pens per treatment.The experimental period lasted for 60 days.[ Results ] The results indicated that adding B.papyrifera in ratio had no significant difference between pH value( P >0.05)and had very significant difference between NH 3-N concentration( P <0.05),compared with BP0(the control).The NH 3-N concentration of adding B.papyrifera groups(BP25,BP50,BP75 )increased about 21.30%,25.18% and 38.92%,respectively,compared with that of BP0 group.Microbial protein(MCP)yield of BP75 group increased about 22.82%,compared with that of BP0 group,and there was significant difference between MCP yield of BP75 and BP25 group( P <0.05).No significantly difference was observed for apparent digestibility of acid detergent fiber(ADF)among each group( P >0.05).Apparent digestibility of nutrition of BP25 group was higher than BP50 group and BP 75 group,and apparent digestibility of dry matter(DM)of BP25 had significant difference with that of BP75 group( P <0.05),and apparent digestibility of neutral detergent fiber(NDF)of BP25 group had significant difference with that of BP50 group( P <0.05).Apparent digestibility of nutrition had no significant difference between BP25 group and BP0 group( P >0.05).Nitrogen intake,digestible nitrogen and deposition of nitrogen of groups with B.papyrifera in ratio were significantly higher than those of BP0 group( P <0.05),nitrogen utilization of BP25 group was supreme,and had significant difference with other groups.Average daily gain(ADG),carcass weight,and slaughter rate of BP25 group and BP50 group were significantly higher than those of BP0 group( P <0.05).Muscle tenderness
