摘 要:分析黄瓜、冬瓜、苦瓜、丝瓜、西瓜等5种葫芦科蔬菜中的K、Ca、Mg、Na、Fe、Cu、Zn、Mn等8种元素含量特点,为葫芦科蔬菜的营养功效提供数据支持。在市售的5种蔬菜中,每种随机抽取5个样品,对其中的K、Ca、Mg、Na、Fe、Cu、Zn、Mn等8种元素进行测定并比较分析。结果表明,5种瓜菜中钾元素含量(w,后同)为762~2 750 mg·kg^-1,钙元素含量为161~376 mg·kg^-1,镁元素含量为21~162 mg·kg^-1),钠元素含量为2.14~36.36 mg·kg^-1,铁元素含量为0.56~4.52 mg·kg^-1、铜元素含量为0.10~0.96 mg·kg^-1、锌元素含量为0.21~2.33 mg·kg^-1、锰元素含量为0.12~1.66 mg·kg^-1。5种葫芦科蔬菜中K、Ca、Mg元素含量丰富,Na、Fe、Cu、Zn、Mn 5种元素含量较低。葫芦科蔬菜高钾低钠的元素含量特征明显,多食葫芦科蔬菜可以降低高盐低钾膳食结构引发高血压病的风险,为瓜菜类蔬菜的选择性食用、药用及养生等功效提供数据参考和理论依据。The components of K, Ca, Mg, Na, Fe, Cu, Zn, Mn etc.eight elements in cucumber, winter melon, bitter gourd,towel gourd, watermelon etc. five kinds of melon vegetables were analyzed to provide data support for the health preservation effect of cucumber vegetables. Fve samples were randomly selected from five kinds of melons and vegetables on the market. The elements K, Ca, Mg, Na, Fe, Cu, Zn and Mn were detected and compared. The component of potassium was762-2 750 mg·kg^-1, the component of calcium was 161-376 mg·kg^-1, and the component of magnesium was 21-162 mg·kg^-1.The component of sodium is 2.14-36.4 mg · kg^-1, the component of iron is 0.56-4.52 mg · kg^-1, the component of copper is0.10-0.96 mg · kg^-1, the component of zinc is 0.21-2.33 mg · kg^-1, and the component of manganese is 0.12-1.66 mg · kg^-1.The components of K, Ca and Mg in five kinds of melon vegetables are rich, but the components of Na, Fe, Cu, Zn and Mn are low. Melon vegetables are high in potassium and low in sodium, and taking more of them can reduce the risk of hypertension caused by the dietary structure with high salt and low potassium, which provides the theory of consumption and health preservation of those melons and vegetables with datas for reference.
