微波加热水对绿豆发芽影响实验研究

摘  要:近年来,国内网络上时有微波加热对食品有影响的传言,如微波加热的水会使豆芽不发芽等。文中采用五种水,分别采用常温、电加热、微波加热对水进行处理后,进行了绿豆发芽实验,分析了对同一种水质不同的加热方式和同一加热方式下不同的水质对绿豆芽生长速率的影响。实验结果证明微波加热的水和电加热的水,都能使绿豆很好的发芽,并不会影响其正常生长,微波加热水对绿豆发芽不会产生影响。In recent years,there have been rumors on domestic network that microwave heating has effects on foods,for example the microwave heating water keeps the beans from germinating.In this paper,five kind of water without heating,heated by electricity and by microwave are used in mung bean germination experiments.The impacts of the same water with different heating methods and the different water with same heating method on mung bean sprouts growth rate are analyzed.The experiments show that the microwave heating water and the electric heating water can all make the mung bean sprouting well and will not affect their normal growth.The microwave heating water will not affect the germination of mung bean.
