摘  要:鱼油作为脂肪源广泛应用于水产养殖中,但鱼油氧化后危害巨大。本文综述了近些年来国内外有关氧化鱼油、鱼油氧化后对鱼类的危害(生长性能、抗氧化功能、肌肉品质及组织结构)及其作用机制的研究进展,旨在为今后深入解析鱼类抗氧化机制以及通过抑制氧化鱼油的负面影响途径开发新型抗氧化剂提供理论基础,进而推动水产养殖业的健康发展。Fish oil is widely used as fat source in aquaculture,but it is harmful after oxidation.In this paper,the research advances of oxidized fish oil at home and abroad in recent years,the detrimental effects of oxidized fish oil on aquatic animals(growth performance,antioxidant function,muscle quality and tissue structure)and its mechanism were reviewed to provide a theoretical basis for the further analysis of the antioxidant mechanism of fish and the development of new antioxidants by inhibiting the negative effects of oxidized fish oil,so as to promote the healthy develop ment of aquaculture.
