基 金:天然水果香精分离浓缩关键技术与产业化研究(2018NY-114)
摘 要:利用真空精馏法制备高倍天然苹果香精,以GC定量分析法检测天然苹果香精中主要挥发性物质作为依据,优化了真空精馏塔塔顶温度,精馏塔回流量与塔顶采出量之比(回流比)工艺参数。最佳的工艺为精馏塔回流量与塔顶采出量之比(回流比)2∶1,精馏塔塔顶温度70.2℃,原料的反-2-己烯醛含量由172.9 mg/L达到2 752.1 mg/L,塔釜残余液中反-2-己烯醛含量为24 mg/L,同时其他醛类、酯类浓度皆有不同程度的提高;而且对不同批次的反-2-己烯醛含量的苹果香精进行重复性试验结果稳定。因此,采用真空精馏法制备高倍天然苹果香精是可行的,对目前苹果香精由于醛类、酯类浓度都不能满足国际高端市场需求的难题提供了新的解决途径,同时提升了产品的销售成功率,使果汁企业有信心将产品变费为宝,实现资源优化,在实际生产中具有指导作用。High-fold natural apple essence was prepared by vacuum distillation,and the top temperature of vacuum distillation tower was optimized based on GC quantitative analysis to detect the main volatile substances in natural Apple essence.The best process parameters of the ratio of the back flow of the distillation column to the amount extracted from the top of the tower(reflux ratio)was 2∶1,the top temperature of the distillation tower was 70.2℃,and the trans-2-hexenaldehyde content of the raw material was from 172.9 mg/L to 2 752.1 mg/L,the content of anti-2-hexenaldehyde in the residual solution of the tower kettle was 24 mg/L,while the concentration of other aldehydes and esters was increased to varying degrees;In addition,the repetitive test results of different batches of anti-2-hexenaldehyde were stable.Therefore,it was feasible to use vacuum distillation to prepare high-grade natural apple essence.At present,apple essence can not meet the demand of the international high-end market due to the concentration of aldehydes and esters.The sales price was low,the sales success rate was low,and the fruit and vegetable juice company abandons the collection of essence.This difficult problem provided new solutions and has great significance as a guide.
