摘  要:【目的】从市场角度确定鲜食玉米品质指标的优先等级,为鲜食玉米种植者调整玉米种植结构,促进鲜食玉米产业快速健康发展提供依据。【方法】对2006-2017年昆明市农贸市场购买鲜食玉米顾客跟踪随机问卷调查获取鲜食玉米品质指标的相关数据,应用层次分析法,确定鲜食玉米品质指标优先等级进行排序,并确定出各指标的评价数值。【结果】糯性>口感>甜度>籽粒饱满度>气味>皮厚薄>籽粒排列>外观>色泽。应用此结果,得出昆明农贸市场主要鲜食玉米品种综合得分,西双版纳四路糯衍生型小白糯>西双版纳小黄糯>石林白糯>红糯、紫糯>黄甜脆。【结论】云南玉米种植结构调整,发展种植鲜食玉米不失为一种玉米提质增效的选择,鲜食玉米种植者种植糯玉米尤其优异资源的糯玉米更能受到市场青睐。【Objective】Quality grades of fresh-eating maize were judged from the market perspective,which would provide basis for growers to adjust the planting structures,and improve the rapid and healthy industrial development of fresh-eating maize.【Method】Radom questionnaire survey was conducted on customers purchasing fresh-eating maize at farmer’s market in Kunming City during 2006—2017.Data related to quality indicators were collected to determine grade ranking based on Analytic Hierarchy Process(AHP),and the evaluation values of each indicator were confirmed as well.【Result】Our results showed that the ranking was as follows:glutinous quality>taste>sweetness>grain fullness>smell>skin thickness>grain array>appearance>color.Based on the results,overall ranking of fresh-eating maize in Kunming farmer5 s market was concluded as follows,small white glutinous maize with the origin of Xishuangbanna four-line glutinous maize>Xishuangbanna small yellow glutinous maize>Shilin white glutinous maize>red glutinous maize,purple glutinous maize>yellow sweet crisp maize.【Conclusion】It was a good choice for maize quality improvement and efficiency enhancing to adjust planting structures and to boost planting scale.For growers of fresh-eating maize,the market orientation was to plant glutinous maize,especially superior glutinous maize.
