冷萃咖啡生产中的过滤可行性研究

摘　　要：随着生活方式的丰富,罐装即饮冷萃咖啡逐渐得到人们的认可。采用膜过滤的方式对高浊度冷萃咖啡进行除菌处理,是对滤膜材料的巨大挑战。只有膜材料具有足够高的过滤载量,才会对生产企业具有量产意义。本文测试了尼龙、聚醚砜等不同的膜材料采用φ47mm恒流过滤装置,过滤冷萃咖啡时的载量。结果表明:采用尼龙膜过滤冷萃咖啡时,载量可达1375L/m^2,即量产冷萃咖啡进行膜过滤除菌是可行的。With the richness of life style,bottled cold brew coffee is gradually recognized by people.It’s a big challenge to sterilize cold brew coffee with high turbidity by filtration membrane.The membrane could be used in cold brew coffee production only if it has large enough throughput.In this paper,membranes of nylon,PES were used to filter coffee withφ47mm constant flow filtration device.The test results showed that the throughput with nylon media could reach to 1375 L/m^2,which proved the feasibility of cold brew coffee filtration by nylon sterile membrane.
