摘 要:中国酿造业历史悠久,工艺发达。漕运时代由于具有商贾云集、百货荟萃之便,过闸盘坝、消磨时间之需,运输便利、成本较低之利且属于摄生之道、行船必备之物,运河流域酿造业产业集聚现象明显,运河沿线各地均有不少酒坊、酱园。然而,随着社会经济的发展,传统手工酿造业式微,因此,在保护传承方面应加大酿造业旅游开发力度,加强酿造文化研究,加大新媒体传播力度并把非遗保护与教育相结合。China’s brewing industry has a long history and developed technology. Because of comercial prosperity, entertainment need of wine, convenience and low cost of water transportation, necessity for life on ships, the brewing industry in the Grand Canal area is relatively concentrated. There are many wineries and brewing gardens along the Grand Canal. However, with social and economical development, the traditional handmade brewing industry is declining. Therefore, to protect brewing industry heritage of Grand Canal, efforts should be made to develop brewing industry tourism, brewing culture research and new media dissemination. Intangible cultural heritage protection should be integrated into school curricula.
