摘  要:使用水浴-超声结合的方法对γ-氨基丁酸(GABA)提取工艺进行优化,并对全稻芽及米体中GABA含量变化进行测量与分析。结果表明,GABA最佳提取条件为:4%(w/v)磺基水杨酸为提取溶剂、水浴振荡15 min、超声20 min。全稻芽和米体中GABA含量变化趋势为:在0~24 h时,含量相同且逐渐增加;24 h^36 h时,含量不一样且下降;36 h^60 h时,含量又逐渐增加,最终全稻芽GABA含量比米体高一倍。结论为发芽能使全稻芽、米体中GABA含量大幅增加,芽体部位是GABA高效产生部位。The extraction process of GABA was optimized by using water bath-ultrasonic combination method,and its content was determined by high performance liquid chromatography(HPLC).The results were that,the optimum conditions were 4%(w/v)sulfosalicylic acid as solvent,15 min water bath oscillation extraction,and 20 min ultrasound extraction.The content of whole rice buds and rice was changed from 0 h to 24 h,and the GABA content was the same and gradually increased.At 24 h^36 h,the GABA content was different and decreased.The content of GABA was increased gradually from 36 h to 60 h.Finally,the GABA content in whole rice buds increased to 65.89 mg/100 g,and the rice body increased to 33.19 mg/100 g.In general,it indicated that germination not only increased the GABA content in the whole rice bud,but also increased the GAGA content in the rice body,but the bud body could accumulate more GABA.
