摘  要:以新鲜胡萝卜为实验原料,石油醚提取胡萝卜素并研究胡萝卜素的各项性能指标。将超声时间、提取时间、提取温度作为自变量,吸光度作为响应值,探讨三个变量对产物吸光度的影响。通过正交实验找出胡萝卜素提取的较佳工艺条件,并研究了胡萝卜色素的溶解度、最佳吸收波长、稳定性、p H值、金属离子影响程度、耐氧化性及耐还原性等。较佳提取工艺为:超声时间120 s;提取时间120 s;提取温度55℃,吸收峰为453 nm。Taking fresh carrots as experimental materials,carotene was extracted with petroleum ether and various performance indexes of carotene were studied.The ultrasonic time,extraction time and extraction temperature of carotene extract were used as independent variables,and the absorbance was used as the response value.The influence of three independent variables on the absorbance of the product was discussed.The optimal process conditions of carotene extraction were found by orthogonal experiments.Then the solubility,optimal absorption wavelength,stability,pH value,metal ion influence degree,oxidation resistance and reduction resistance of carrot pigment were studied.The optimal extraction conditions were as follows:ultrasonic time was 120 s,extraction time was 120 s,extraction temperature was55℃,the maximum absorption peak of carrot pigment was 453 nm.
