摘  要:结合物理扫描电镜法和化学全二维气相色谱飞行时间质谱法对食品旋开盖黑线缺陷的产生原因进行了分析,并通过乙酸浸泡试验模拟黑线缺陷的生成。结果表明,黑线的生成和食品内容物中的乙酸的浓度密切相关,乙酸从缝隙渗入盖子中,形成乙酸铁(浅棕色固体),乙酸铁在漆膜下面突起,和漆膜颜色复合,形成黑线缺陷。The cause of black-streak defects on food unscrewing cap is analyzed by GC×GC Chromatography TOFMS,Morphology and EDS.Immersion experiment of cap in different concentration acetic acid was established to simulate growth of black-streak defect.The experiment proved that acetic acid concentration in the food has closely relation with the black-streak defect.Acetic acid was speculate to permeate into the gap of the cap and then the ferric acetate was formed(light brown solid).Then ferric acetate break out under the surface of paint and its color was coincided with paint,which lead to the formation of the black-streak defect.
