杜泊羊背最长肌中脂肪酸种类与含量分析

摘　　要：杜泊羊作为一种进口品种,因其胴体嫩、多汁、鲜、瘦而被国际誉为"钻石级肉"。为探讨杜泊羊肉中脂肪酸的含量随月龄的变化规律,本研究利用气相色谱质谱(GC-MS)技术对6月龄与12月龄杜泊羊背最长肌中36种脂肪酸的种类和含量及在脂肪酸中所含比重进行研究。结果显示,杜泊羊背最长肌共有36种脂肪酸,其中6月龄与12月龄的饱和脂肪酸含量>单不饱和脂肪酸含量>多不饱和脂肪酸,饱和脂肪酸以及长链脂肪酸含量在12月龄显著高于6月龄(P<0.05),多不饱和脂肪酸的含量在12月龄极显著高于6月龄(P<0.01)。C15:1,C17:0在不同月龄表达差异显著(P<0.05),C18:2c6,C18:3n3,C20:3n3在不同月龄表达差异极显著(P<0.01)。脂肪酸分析结果表明,12月龄杜泊羊的肌肉比6月龄营养价值高。As an imported variety, Dorper Sheep has been internationally known as "diamond meat" because of its tender, juicy, fresh and thin body. In order to investigate the variation of fatty acid content in Dorper Sheep mutton with age, this study used gas chromatography-mass spectrometry(GC-MS) technique to classify 36 fatty acids in the longissimus dorsi of Dorper Sheep at 6 months and 12 months. And the content and the specific gravity contained in the fatty acid were studied. The results showed that 36 fatty acids were detected,among which saturated fatty acid content>monounsaturated fatty acid content>polyunsaturated fatty acid for 6 months and 12 months old sheep.The content of saturated fatty acids and long-chain fatty acids in Dorper sheep at 12 months old were higher than that of 6-month-old;the content of poly unsatuated fatty acids at 12 months was extremely higher than that of 6 month(P<0.01).The expressions of C15:1 and C17:0 were significantly different at different ages(P<0.05), and the expressions of C18:2 c6, C18:3 n3 and C20:3 n3 were extremely different at different ages(P<0.01).Analysis shows the muscle of 12-month-old Dorper offers have more nutritional value than that of the 6-month-old.
