摘 要:反胶束提取法是一种适用于生物大分子分离纯化的新技术,在植物蛋白提取方面具有广阔的应用前景。本文介绍了国内外反胶束法提取和纯化植物蛋白的研究进展,阐述了反胶束体系的定义以及其提取蛋白质的原理和特点,并比较和总结了反胶束法和传统方法制备的植物蛋白结构和物化性质的差异,讨论了反胶束萃取法对植物蛋白的结构、功能性和应用的影响,提出了反胶束萃取技术应用到工业生产中面临的主要难题,并根据提取特点展望其应用前景。Reverse micelle is a novel extraction technique suitable for the separation and purification of biological macromolecules. It has wide application prospects for plant protein extraction. In this paper, the definition of reverse micelles, the principle and characteristics of protein extraction by reverse micelles were introduced. The structure and physic-chemical properties of plant protein obtained through traditional and reverse micellcal methods were compared. The effects of reverse micelles on the structure, physicochemical, functional and application of plant proteins were analyzed. The major problems for the application of reverse micelle in industrial production were also presented. The prospect of application was forecasted according to the characteristics of reverse micelles extraction.
