拜城油鸡与良凤花鸡杂交后代(F3A型)屠宰性能及肉品质分析

摘　　要：利用拜城油鸡公鸡与良凤花母鸡杂交一代(F_1),再利用拜城油鸡的公鸡与F_1中的青脚母鸡级进杂交,得到F_2代,选取F_2代的青脚母鸡与F_2代的高脚公鸡进行横交,得到油麻鸡F_3A型,测定其公、母鸡的屠宰性能与肉品质指标。结果表明:F_3A型公、母鸡的屠宰率、半净膛率、全净膛率分别比拜城油鸡公、母鸡提高6.73%(P<0.01)、5.8%(P<0.05)、2.82%(P>0.05)和4.42%(P<0.05)、4.22%(P<0.05)、1.65%(P>0.05);公、母鸡胸肌肉色分别比良凤花鸡提高7.31和11.08,公、母鸡腿肌肉色比良凤花鸡提高21.23和16.88;公、母鸡胸肌滴水损失分别比良凤花鸡提高1.26%(P<0.01)和4.73%(P<0.01)。拜城油鸡与良凤花鸡杂交后,杂交后代的屠宰性能有明显改善,肉品质指标亦有相应变化。The first generation(F 1)of crossbreeding between Baicheng oil chicken cock and Liangfeng spotted hen was utilized,and then the cocks of Baicheng oil chicken and the green-footed hens in F 1 were hybridized to obtain F 2 generation.The F 2 generation of green-footed hens and the F 2 generation of tall-footed cocks were selected for cross-crossing to obtain F 3 A type of oil-pocked chicken,and the slaughter performance and meat quality indexes of male and female chickens were measured.The results showed that the slaughter rate,half-evisceration rate and full evisceration rate of F 3 A cocks and hen were 6.73%(P<0.01),5.8%(P<0.05),2.82%(P>0.05)and 4.42%(P<0.05),4.22%(P<0.05),1.65%(P>0.05)and 1.65%(P>0.05)higher than those of Baicheng oil male and female respectively.The breast muscle color of male and female was 7.31 and 11.08 higher than that of Liangfeng spotted chicken,while the leg muscle color of male and female was 21.23 and 16.88 higher than that of Liangfeng spotted chicken.The drop loss of pectoral muscle in male and female chickens increased by 1.26 percentage(P<0.01)and 4.73 percentage(P<0.01)respectively than that in Liangfeng spotted chicken.After crossbreeding Baicheng oil chicken and Liangfeng spotted chicken,the slaughter performance of the crossbred offspring was significantly improved,and the meat quality index also changed accordingly.
