摘  要:本研究旨在探讨运输后放牧对山羊生理条件和肉质性状的影响.试验选择24只阉割雄公羊,随机分为4组,每组6个重复,每个重复1只.对照组未运输,T1组运输前6 h行走30 min,之后人为驱使行走30 min.T2组运输后48 h放牧,T3组运输后72 h放牧.结果:与对照组相比,T1组和T2组血清T3和T4浓度显著降低(P<0.05).T3组血清皮质醇浓度显著高于其他三组(P<0.05).T1和T2组较对照组显著提高了血清中性粒细胞与淋巴细胞的比值(P<0.05).T1组肌肉pH显著高于其他三组(P<0.05),对照组肌肉蒸煮损失最高(P<0.05),T2组最低(P<0.05).T2和T3组肌肉滴水损失显著高于对照组和T1组(P<0.05),T1组较对照组显著提高了肌肉系水力(P<0.05),而T2组较其他三组显著降低了肌肉系水力(P<0.05).运输后显著降低了肌肉亮度、红度和黄度值(P<0.05).运输后放牧组肌肉亮度、红度和黄度值与对照组相比有显著性差异(P<0.05),其中T3组亮度和黄度值更高.结论:运输后72 h放牧除了显著提高血清皮质醇水平,降低部分肌肉品质外,可以缓解运输应激对山羊的影响.The purpose of this study was to investigate the effects of post-transport grazing on physiological conditions and meat quality of goats.A total of 24 castrated male goats were randomly divided into 4 groups with 6 replicates and 1 male each.The control group was not transported.The T1 group walked for 30 minutes 6 hours before transportation,and then walked for 30 minutes under artificial drive.Grazing was performed 48 h after transportation in group T2 and 72 h after transportation in group T3.Results:compared with the control group,the serum T3 and T4 concentrations in the T1 and T2 groups were significantly lower(P<0.05).Serum cortisol concentration in T3 group was significantly higher than that in the other three groups(P<0.05).The ratio of serum neutrophils to lymphocytes in the T1 and T2 groups was significantly higher than that in the control group(P<0.05).The muscle pH value of T1 group was significantly higher than that of the other three groups(P<0.05),the muscle cooking loss of control group was the highest(P<0.05),and that of T2 group was the lowest(P<0.05).The loss of muscular dripping in the T2 and T3 groups was significantly higher than that in the control group and the T1 group(P<0.05).The muscular dripping loss in the T1 group was significantly higher than that in the control group(P<0.05),while the muscular dripping loss in the T2 group was significantly lower than that in the other three groups(P<0.05).After transportation,muscle brightness,reddness and yellowness were significantly decreased(P<0.05).After transportation,there were significant differences in muscle brightness,reddness and yellowness between the group and the control group(P<0.05),among which T3 group had higher brightness and yellowness.Conclusion:in addition to significantly increasing serum cortisol level and reducing some muscle quality,72-h grazing after transportation can alleviate the impact of transportation stress on goats.
