摘  要:[目的]阐明果蔬冷害发生机理,为控制采后果蔬冷害发生、提高果蔬冷藏品质和延长其货架期提供依据。[方法]对国内外文献进行归纳总结。[结果]综述了采后果蔬冷害发生的机理及其与膜脂组分、膜脂相变、电解质外渗、能量代谢失调、氧化胁迫等的关系,并探讨了减轻采后果蔬冷害的物理和化学技术。[结论]保护果蔬细胞膜结构有利于提高采后果蔬的抗冷性并延长其贮藏期。[Purpose]Elucidate the mechanism of chilling injury in harvested fruits and vegetables,in order to provide a scientific basis for controlling the occurrence of chilling injury in harvested fruits and vegetables,improving the quality of cold storage of fruits and vegetables,and extending their shelf life.[Method]To summarize domestic and foreign literature.[Result]The mechanism of chilling injury in harvested fruits and vegetables and its relationship with changes of membrane lipid composition,the phase transition of membrane lipids,electrolyte extravasation,the disorder of energy metabolism,and oxidative stress were reviewed.Physical and chemical technologies to reduce chilling injury of postharvest fruits and vegetables were discussed.[Conclusion]Protecting the cellular membrane structure of fruits and vegetables is beneficial to enhancing the cold tolerance and extending the storage time of postharvest fruits and vegetables.
