摘 要:【目的】分析复烤片烟特征面积与其关键化学成分的相关性,为研究片烟结构对卷烟化学成分及感官质量的影响提供参考。【方法】选择两种初烤烟叶作为试验材料,利用叶片振动分选机对复烤后片烟进行筛分,测定不同尺寸片烟的特征面积及其关键化学成分(常规化学成分、质体色素、多酚类化合物和非挥发性有机酸),并分析不同特征面积片烟化学成分的变化趋势及其相关性。【结果】①随着片烟特征面积的增大,总糖、还原糖、总植物碱、淀粉、绿原酸、芸香苷、棕榈酸、亚油酸、油酸、亚麻酸、硬脂酸含量逐渐升高;钾、氯、莨菪亭、草酸、丙二酸、丁二酸、苹果酸、柠檬酸含量逐渐降低;总氮、蛋白质、叶黄素、β-胡萝卜素含量先升高后降低。②对于红大C3F复烤片烟,特征面积与总糖、还原糖、总植物碱、芸香苷、硬脂酸呈显著正相关,与钾、草酸、丙二酸、柠檬酸呈显著负相关;对于K326 B3F复烤片烟,特征面积与总植物碱、芸香苷、棕榈酸、亚油酸、油酸、亚麻酸、硬脂酸呈显著正相关,与草酸、丙二酸、丁二酸呈显著负相关。【结论】不同尺寸片烟的化学成分含量存在较大差异,且两者之间具有较强的相关性。因此,在打叶复烤过程中,提升不同尺寸片烟的分布均匀性对提高关键化学成分的均质化水平,稳定最终的产品质量具有重要意义。[Background] The correlation between the key chemical components and characteristic area of redried laminas was analyzed to provide references for studying the effects of laminas structure on the chemical components and sensory quality of cigarettes.[Method] Two kinds of redried tobaccos were selected as the test materials and the redried laminas were screened by blade vibration sorter.The characteristic area and key chemical components (routine chemical components,plastid pigments,and polyphenols and non-volatile organic acids) of laminas with different sizes were determined.The variation trend of chemical components in redried laminas with different characteristic areas as well as the correlation of chemical components and characteristic areas were analyzed.[Results] 1) With the increase of characteristic area of redried laminas,the contents of total sugar,reducing sugar,total alkaloids,starch,chlorogenic acid,rutin,palmitic acid,linoleic acid,oleic acid,linolenic acid and stearic acid increased gradually,the contents of potassium,chlorine,scopolamine,oxalic acid,malonic acid,succinic acid,malic acid and citric acid decreased gradually,and the contents of total nitrogen,protein,xanthophyll and β-carotene increased first and then decreased.2) For redried laminas Hongda-C3F,characteristic area was significantly positively correlated with the contents of total sugar,reducing sugar,total alkaloids,rutin and stearic acid,while significantly negatively correlated with the contents of potassium,oxalic acid,malonic acid and citric acid.For redried laminas K326-B3F,characteristic area was significantly positively correlated with the contents of total alkaloids,rutin,palmitic acid,linoleic acid,oleic acid,linolenic acid and stearic acid,whiles significantly negatively correlated with the contents of oxalic acid,malonic acid and succinic acid.[Conclusion] There was a significant difference in content of chemical components among strips with different sizes,and there was a strong correlation between them.Therefore,in the
