摘  要:【目的】探究‘太平鸡’‘海兰褐鸡’及其杂交一代屠宰性能及肉品质差异.【方法】以36只55周龄相同饲养管理条件下的3种鸡的母鸡为研究对象,测定其屠宰性能及肉品质.【结果】‘太平鸡’的宰前活质量、屠体质量、半净膛质量、全净膛质量、腿肌质量、腹脂质量和肌胃质量均为最高;‘海兰褐鸡’的肉色L*和b*最高,太海杂交鸡的肉色a*最高;太海杂交鸡的腿肌剪切力以及胸肌和腿肌的pH均最低,但肌肉粗蛋白质含量最高;‘海兰褐鸡’肌肉中SFA最高,太海杂交鸡最低,太海杂交鸡肌肉中UFA和MUFA均最高,‘太平鸡’肌肉中PUFA和EFA含量均最高,‘海兰褐鸡’最低;‘海兰褐鸡’的肌纤维直径均最大,‘太平鸡’的肌纤维密度最高.【结论】3种鸡屠宰性能和肉品质存在一定差异,可以根据目标产品需求合理选择.【Objective】To investigate the slaughter performance and meat quality differences among Taiping chicken,Hy-line Brown chicken and their hybrid.【Method】The slaughter performance and meat quality of 36 chickens(55 weeks old,12 hens each group)under the same raising conditions were determined.【Result】The slaughter weight,dressed weight,half eviscerated weight,eviscerated weight,leg muscle weight,abdominal fat weight and gizzard weight of Taiping were the highest.The flesh-color L*and b*of Hy-line Brown were the highest,and the flesh-color a*of the hybrid was the highest.The shear force of leg muscle,the pH of breast and leg muscle of hybrid were the lowest,but the crude protein content was the highest.Saturated fatty acid content of Hy-Line Brown was the highest and the hybrid was the lowest,both unsaturated fatty acid and monounsaturated fatty acid contents of hybrid were the highest.Taiping had the highest polyunsaturated fatty acid and essential fatty acid contents,and Hy-line Brown was the lowest.The muscle fiber diameter of Hy-line Brown was the largest,and the muscle fiber density of Taiping was the highest.【Conclusion】The slaughter performance and meat quality of 3 kinds of chickens were different,and they could be rationally utilized according to the production target.
