摘 要:以云烟87上部叶、中部叶、下部叶为试验材料,研究了烟叶烘烤中亮度值L^*、红度值a^*、黄度值b^*、总色差ΔE与含水量的变化规律及其关系。结果表明:(1)各部位烟叶烘烤中颜色值变化规律基本一致。叶片颜色值均在42℃前增长,且在38℃前增幅最明显,主脉颜色值显著变化的时期滞后于叶片,总体在54℃之后,上部叶颜色值的变化慢于中、下部叶。(2)烘烤中叶片、整叶总水含量在42~54℃期间失水幅度逐渐增大,主脉失水较难,中、下部叶在48℃之后明显降低,上部叶在54℃之后。叶片、主脉自由水含量分别在38℃之前和48℃之后快速降低;叶片束缚水在38℃前呈增长趋势,主脉束缚水含量增长时期较长,但均在54℃之后急剧降低。(3)主脉颜色值与含水量指标的相关性最好,各部位烟叶主脉L*值与主脉束缚水均呈极显著正相关;主脉a^*、b^*、ΔE值与总水、自由水及叶片束缚水含量具有较好的相关性;上部叶叶片a*值与叶片、整叶总水含量均呈显著负相关,中、下部叶叶片颜色值与叶片自由水含量的相关性较好。The upper,middle and lower leaves of Yunyan 87 are used as experimental materials.The relationship between L^*,a^*,b^*,ΔE and moisture content in tobacco leaves during curing is studied.The results indicate that:(1)The change rule of color value in different parts of tobacco leaves is basically the same.The color value of each leaf increases before 42℃,and the most obvious increase is before 38℃.The period of obvious variation of color value of main vein lags behind that of leaf,after 54℃as a whole.The change of color value of upper leaves is slower than that of middle and lower leaves.(2)The total moisture content of blades and whole leaves increases gradually during the period of 42~54℃.It is difficult for the midrib to lose moisture.The middle and lower leaves decrease significantly after 48℃,while the upper leaves decrease after 54℃.Free water content in blades and midrib decreases rapidly before 38℃and after 48℃.The irreducible water content increases first and then decreased.The blade show an increasing trend before 38℃.The irreducible water content in the midrib increases for a long time,but decreases sharply after 54℃.(3)The correlation between color value of midrib and moisture content index is the best.The L^*of midrib and bound water of midrib in tobacco leaves of different parts are significantly positively correlated.The values of a^*,b^*,ΔE in the midrib is correlated with total water,free water and bound water content of leaves.There is a significant negative correlation between a*value of upper leaves and total water content of blades and whole leaves.The correlation between leaf color and free water content in middle and lower leaves is good.
