摘 要:为比较冬闲地种草养鹅模式下不同鹅品种的生长发育、屠宰性能和肉品质,以28日龄四川白鹅、浙东白鹅、扬州鹅和霍尔多巴吉鹅为研究对象,采取全程草地放牧加补饲方式,每组3个重复,每个重复10只,于70日龄开展屠宰测定和肉品质测定。结果显示:①在整个生长发育期间,四个品种鹅在生长发育前期增重较大,后期趋于缓慢。在生长发育前期(28~49日龄),扬州鹅的周增重均不同程度地高于四川白鹅和浙东白鹅,但在36~42日龄时扬州鹅的体增重低于霍尔多巴吉鹅;在生长发育后期(50~70日龄),扬州鹅的体增重均高于其他三个品种鹅。②扬州鹅的屠宰率高于其他三个品种的鹅;扬州鹅的腹脂率为1.39%,显著低于其他三个品种鹅。③扬州鹅不同部位肌肉中水分含量最低,胶原含量最高;扬州鹅的胸肌中蛋白质含量显著高于其他三个品种鹅。综上所述,扬州鹅可作为种草养鹅的理想品种,研究结果为种草养鹅模式下适宜品种的选择提供了理论依据。In order to compare the growth and development,slaughter performance and meat quality of different goose breeds in the winter idle land,the 28-day-old Sichuan white goose,Zhedong white goose,Yangzhou goose and Hallo Baja goose were studied.The whole process of grassland grazing and supplement feeding was adopted,with 3 replicates in each group and 10 replicates in each group.The slaughter determination and meat quality determination were carried out at 70 days of age.The results showed that:①During the whole growth and development period,the four species of geese gained more weight in the early stage of growth and development,and the later stage became slower.In the early stage of growth and development(28 to 49 days old),the weekly weight gain of Yangzhou goose was higher than that of Sichuan white goose and Zhedong white goose,but the body weight gain of Yangzhou goose was lower than that of Hallo Bagi goose at 36-42 days old.In the late growth stage(50 to 70 days old),the weight gain of Yangzhou goose was higher than that of the other three breeds.②The slaughter rate of Yangzhou goose was higher than that of the other three breeds;the belly fat rate of Yangzhou goose was 1.39%,which was significantly lower than that of the other three breeds.③The moisture content of different parts of Yangzhou goose was the lowest;the content of collagen was the highest;the protein content of the chest muscle of Yangzhou goose was significantly higher than that of the other three breeds.In summary,Yangzhou goose could be used as an ideal species for growing grass and raising geese.The research results provided a theoretical basis for the selection of suitable varieties under the grass-raising goose model.
