摘  要:为确定促睡眠酸乳的工艺配方,并进行功能评价,采用对比试验研究酸枣仁提取物的提取方法。采用正交试验研究酸枣仁水提物、茯苓、五味子、百合干混合提取物、稳定剂添加量及菌种接种量对产品品质的影响,并利用小鼠进行酸乳促睡眠功能评价。结果表明:添加10.0%(W/W,下同)的酸枣仁水提取物,7.0%的茯苓、五味子、百合干混合提取物(茯苓、五味子和百合干提取物的质量比为1∶1∶1),0.2%的复合稳定剂,接种4.0%的菌种(保加利亚杆菌和嗜热链球菌的质量比为1∶1)所制备的促睡眠酸乳品质最佳。酸乳与酸枣仁、茯苓、五味子提取物对小鼠促睡眠效果有良好的协同作用,并呈现出一定的剂量效应关系。与普通酸乳相比,促睡眠酸乳处理组具有显著的镇静催眠作用,可作为一种新型发酵型乳制品推广。To study the formula of the sleep-promoting yogurt and evaluate its sleep-promoting functional.The optimum extraction method of extracts from semen ziziphi spinosae by comparative experiment was studied.The effects of the amount of semen zizyphi spinosae water extract,poria cocos,schisandra,lily mixture of extract,stabilizer and inoculation on the quality of the product were studied by using orthogonal experiment.The function of the sleep-promoting yogurt was evaluated in mice.For the new kind of yogurt,the optimal ingredients of semen zizyphi spinosae water extract,poria cocos,schisandra,lily mixture of extract(The mass ratio of poria,schisandra and lily extract was 1∶1∶1),compound stabilizers,yoghurt starters(The mass ratio of lactobacillus bulgaricus and streptococcus thermophilus was 1∶1)were 10.0%,7.0%,0.2%,4.0%,respectively.Semen zizyphi spinosae,poria cocos and schisandra extracts had a good synergistic effect in sleep-promoting effect in mice and showed a dose-effect relationship.Compared with ordinary yogurt,sleep-promoting yogurt treatments group possess obviously sedative and hypnotic effects in mice,which can be used as a new type of fermented dairy products to promote.
