摘 要:利用国外引进的优良肉用绵羊品种萨福克羊、特克赛尔羊以及杜泊羊和延安地区湖羊进行杂交,比较不同杂交组合羔羊屠宰性能和肉品质。结果:萨福克羊、特克赛尔羊和湖羊杂交羔羊在宰前活重、胴体重、眼肌面积、失水率和剪切力、肉品嫩度和风味、不饱和脂肪酸的含量以及氨基酸的构成比例上要优于纯湖羊后代;杜泊羊和湖羊杂交一代在产肉性能和肉品嫩度上逊于纯湖羊后代,但在不饱和脂肪酸的含量和氨基酸构成比例上优于纯湖羊后代。试验表明,利用萨福克羊、特克赛尔羊和湖羊杂交可提高湖羊产肉性能和肉品质;利用杜泊羊和湖羊杂交可以提高湖羊的肉品质。To compare the effects of different hybrid combinations on the carcass traits and mutton quality of mutton sheep,the imported Suffolk,Texel and Dorper sheep were used to hybridize with the Yan’an Hu sheep.The results were that Suffolk sheep×Hu sheep and Texel Sheep×Hu sheep produced lambs with better mutton production performance,mutton tenderness and flavor,unsaturated fatty acid content and amino acid composition ratio than pure Hu lambs.Dorper sheep×Hu sheep produced lambs with poorer mutton production performance and mutton tenderness than pure Hu lambs,but higher unsaturated fatty acid content and amino acid composition ratio.In conclusion,the hybridization of Hu sheep with Suffolk and Texel and Lake sheep improved both the mutton production performance and mutton quality of the lambs,and that of Hu sheep with Dorper sheep produced lambs with only better mutton quality.
