摘 要:通过区域历史地理的研究视角,可以深化对区域蔬菜史的认识。清代陕西夏秋瓜茄菜豆蔬菜格局尚未完全成型,园蔬和野蔬的区域分布、食用频度、收获早晚及商品化程度存在鲜明的区域差异。这种局面的形成,与热量、灌溉、土壤等自然因素,交通、市场、城市、政策等社会经济政治因素和文化、心理等人文因素密切相关。The current research on the vegetables’ history seems to be trapped in the research nest of a large area and a single species. Regional historical geography can help to deepen the understanding of the vegetables’ history in a certain region. This paper argues that vegetables pattern of summer and autumn were not fully formed during Qing Dynasty and the regional distribution, the eating frequency and the harvest time of planting vegetables and wild vegetables were showing distinct regional differences in Shaanxi.It was formed by various factors. This paper believes that natural factors such as heat, irrigation and soil were basic elements, while the social economic and political factors such as transportation, market, city and policy were promotional function, and cultural psychology and other cultural factors were catalytic effect. Finally, the regional differences in Shaanxi vegetables in the latitudinal zonality and the vertical zonality were shaped. Regional historical geography provides a theoretical guidance for a deep understanding of the vegetable history of Shaanxi in the Qing Dynasty and will help to write the vegetables’ history throughout the country.
