摘 要:刺芹侧耳菌丝体对外源的钙有较好的富集能力,可以将无机态的钙转变为更易被人体吸收的有机钙,为研制一种更高效、低廉、安全的补钙食品有重要的现实意义。研究通过添加五种不同的外源钙(氯化钙,硝酸钙,碳酸钙,乳酸钙,氨基酸螯合钙)对刺芹侧耳菌丝生长和子实体发育的影响,筛选出最适合刺芹侧耳菌株“L2702”的外源钙为乳酸钙,并确定刺芹侧耳菌丝体对其耐受钙的浓度范围为0~0.6 mg/mL。通过在不同浓度的乳酸钙的培养料培养下,刺芹侧耳子实体中可溶性总糖和可溶性蛋白随着浓度的升高呈现正态分布,确定浓度为0.6 mg/mL处理组为最适合的浓度,显著高于无外源钙组(p<0.05);不同浓度乳酸钙对刺芹侧耳子实体脂肪和游离氨基酸的影响不明显,无显著差异;最适浓度的乳酸钙提高了刺芹侧耳子实体的产量,缩短了其生长周期;在栽培料中添加乳酸钙,钙含量随着乳酸钙浓度的增加而增加,但子实体中钙含量呈现正态分布,最适合的浓度为0.6 mg/mL。结果表明,刺芹侧耳对外源钙具有很强的生物富集能力,可能是菌丝体的特定成分如总糖、蛋白等协同抗氧化酶系增强了菌体对外源钙的耐受性及富集特性。Pleurotus eryngii can be a high-efficiency,cheap and safe calcium food since which has outstanding calcium enrichment capacity and can change the inorganic calcium into the organic calcium which could be easily absorbed by human body.In this research,the effects of five different exogenous calciums of calcium chloride,calcium nitrate,calcium carbonate,calcium lactate,and amino acid chelated calcium on P.eryngii mycelium and fruit body were discussed,the results were showed below.The optimum exogenous calcium of the stain"L2702"was selected as calcium lactate with tolerance concentrations in the ranges of 0~0.6 mg/mL.With different calcium lactate concentrations treatment,the total soluble sugars and soluble proteins in P.eryngii in fruit body were rised firstly and then declined by the increasing of calcium lactate concentrations.The group with 0.6 mg/mL exogenous calcium treatment was significantly higher than the group without exogenous calcium(p<0.05).The effects of different concentrations of calcium lactate on fat and free amino acids in fruiting bodies of P.eryngii were not obvious.The optimum exogenous calcium was able to improve the yield of P.eryngii fruiting body and short its growth cycle.In cultivated material,the calcium contents were increased by the increasing of calcium lactate concentra-tions,but calcium contents in the fruiting body showed normal distribution and the optimum concentration was 0.6 mg/mL.The results indicated that P.eryngii had a strong bioconcentration ability for exogenous calcium,mycelium specific components of total sugars,proteins and other synergistic antioxidant enzymes might enhanced the tolerance and accumulation characteristics of mycelium on exogenous calcium.
