摘 要:糖含量与种类在食品营养与口感中有重要作用。采用超高效液相色谱-蒸发光散射法探索14年生4种类型林下参(竹节芦(粗)、竹节芦(细)、长脖芦及马牙芦)开花期根部及茎叶部麦芽糖、蔗糖、葡萄糖及果糖的含量差异,旨在为人参选种以及人参食品加工提供一定理论依据。结果表明,4种类型林下参在4种糖的含量中差异不显著,但在糖类的积累中,马牙芦占一定的优势;比较根与茎叶的4种糖分布发现,根部4种糖占比依次为蔗糖>果糖>葡萄糖>麦芽糖,茎叶4种糖占比依次为葡萄糖>果糖>蔗糖>麦芽糖。Sugar plays an important role in food nutrition and taste.In this study,the content of sugar in roots,stems and leaves of 14-year-old Panax ginseng cultivation(Zhujielu(stocky),Zhujie(spindly),Changbolu(stocky)and the Mayalu(spindly))was compared.The sugars such as fructose,glucose,sucrose and maltose in ginseng were detected by ultra performance liquid chromatography-evaporative light sc-attering detectionare(UPLC-ELSD).The results showed that there was no significant difference in the contents of four sugars among the four types of Panax ginseng,but in the accumulation of sugars,the Mayalu had a certain advantage.Comparing the sugar distribution of root and stem leaves,it was found that four sugars in the root from big to small was sucrose>fructose>glucose>maltose,and four sugars in the stem and leaves was glucose>fructose>sucrose>maltose.The research results provide a theoretical reference for the selection of species and food processing of forest cultivated Panax ginseng.
