摘 要:以36种不同产地的蓝莓果实为试材,色差仪测定色度值,比色法测定花青素、黄酮、多糖、多酚含量,HPLC法检测矢车菊素-3-O-葡萄糖苷、飞燕草素-3-O-葡萄糖苷等6种花色苷单体含量,并运用主成分分析和聚类分析法对蓝莓品质进行评价,探讨蓝莓的色度值、花色苷及主要活性成分含量等指标的相关性,并进行综合评分,对蓝莓进行质量综合评价,以期为筛选优良品种提供参考依据。结果表明:不同产地蓝莓间的各项指标均存在显著的差异。主成分分析表明,13个指标可用3个主成分来表述,其累积方差贡献率达82.606%,第一主成分由花青素、花色苷和L^*决定;第二主成分由多酚、总黄酮、飞燕草素-3-O-阿拉伯糖苷和a^*、b^*决定;第三主成分是多糖。聚类分析将36个样本聚为4类,第3类群品种最多,主要表现为花青素、6种单体花色苷、多酚含量相近;通过主成分分析结合聚类分析法对蓝莓进行综合评价的方法准确可靠、简单省时,适用于蓝莓品质的综合评价,为蓝莓资源的开发提供科学参考依据。36 blueberry fruits from different habitats were used as test materials,the colorimeter was used to determine the chromaticity value,the colorimetric method was used to determine the content of total anthocyanin,flavonoids,polysaccharides,and polyphenols,and the content of six anthocyanins such as cyanidin-3-O-glucoside and delphinidin-3-O-glucoside were determined by HPLC,and the quality of blueberries were evaluated by principal component analysis and cluster analysis.The colorimetric value,anthocyanins and main active components of blueberries were discussed.Correlation of indicators,and comprehensive scores,comprehensive evaluation of blueberry quality,with a view to providing a reference basis for screening good varieties.The results showed that there were significant differences in various indicators among blueberries from different regions.Principal component analysis showed that 13 indicators could be expressed by 3 principal components,and the cumulative variance contribution rate was 82.606%.The first principal component was determined by total anthocyanin,anthocyanins,and L^*;the second principal component was determined by polyphenols,total flavonoids,delphinidin-3-O-arabinoside and a^*,b^* determine;the third main component was polysaccharide.The cluster analysis clustered 36 samples into 4 groups,with the largest number of varieties in the 3 rd group,which mainly showed similar contents of total anthocyanin,6 monomeric anthocyanins,and polyphenols.The blueberry was synthesized by principal component analysis and cluster analysis.The evaluation method was accurate,reliable,simple and time-saving.It was suitable for the comprehensive evaluation of blueberry quality and provides a scientific reference for the development of blueberry resources.
