摘  要:本文以柚叶为原材料通过酸提获取水溶性膳食纤维,研究提取时间、提取温度、液料比和柠檬酸浓度对水溶性膳食纤维提取率的影响,利用Box-Behnken试验设计与响应面优化得到最佳的提取工艺条件为:提取时间60 min、提取温度84℃、液料比15 mL/g和柠檬酸浓度8%,此时提取率为10.15%,与预测值相对误差为0.88%,说明建立的模型稳定可靠。在此工艺条件下获得的水溶性膳食纤维膨胀力为9.63 g/g,持水力为4.77 mL/g。Water-soluble dietary fiber was obtained by acid extraction using pomelo leaves as raw material.The effects of extraction time,extraction temperature,liquid-material ratio and citric acid concentration on the extraction yield of water-soluble dietary fiber were studied.The best extraction process conditions were as follow:extraction time was 60 min,extraction temperature was 84℃,liquid-material ratio was 15 mL/g,and citric acid concentration was 8%.The extraction yield was 10.15%,and the relative error was 0.88%compared with the predicted value,which indicated that the established model was stable and reliable.The swelling power of the water-soluble dietary fiber obtained under this condition was 9.63 g/g,and the water holding capacity was 4.77 mL/g.
