摘 要:旨在研究耐重金属饲料桑的饲料价值,为其作为精料部分添加在反刍动物养殖业提供依据。本试验首先对耐重金属饲料桑和牛用全价精料进行营养成分测定,然后采用体外产气法对这两种样品进行对比评定,包括测定0 h、2 h、4 h、8 h、12 h、24 h的产气量,12 h和24 h时发酵液的pH值、体外干物质消化率、氨态氮、微生物蛋白浓度以及挥发性脂肪酸产量。结果表明:饲料桑粉中干物质含量、粗蛋白、粗脂肪、粗纤维、钙均比相同质量的牛用全价精料中含量高,二者的总能则基本无差异;在产气速度方面,饲料桑经历了快速增加到缓慢增加并趋于平缓两个过程,牛用全价精料则经历了缓慢增加、快速增加和缓慢增加并逐渐趋于平缓3个阶段,饲料桑的12 h、24 h的累计产气量均显著高于牛用全价精料产气量;饲料桑在12 h和24 h的pH值波动范围5.41~5.55,而牛用全价精料则为4.63~4.78,表明饲料桑对瘤胃液pH值负面影响较牛用全价精料显著偏小;饲料桑的体外干物质消化率则显著低于牛用全价精料;而12 h和24 h的微生物蛋白浓度和氨态氮则饲料桑的均显著高于牛用全价精料;12 h时,饲料桑和牛用全价精料的总挥发性脂肪酸含量分别87.64 mmol/L和108.96 mmol/L,无显著差异,但24 h时,饲料桑的总挥发性脂肪酸含量显著低于牛用全价精料的总挥发性脂肪酸含量;而乙酸/丙酸在发酵12 h、24 h时均无显著差异。可见,耐重金属饲料桑营养价值高,具有良好的应用前景,可作为精饲料开发利用。We aimed to determine the nutritional value of the heavy-metal-resistant forage mulberry,and provide information for the development and utilization of it as partial substitution of concentrate feed for ruminants.In this experiment,we firstly determined the nutritional components of the heavy-metal-resistant forage mulberry and the compound concentrate for cattle and then compared and evaluated them by in vitro gas production method,including the determination of 0 h,2 h,4 h,8 h,12 h,24 h gas production and pH,the in vitro digestibility of dry matter,microbial protein concentration,ammonia and the volatile fatty acid at 12 h and 24 h fermentation time.The results showed that compared with the compound concentrate for cattle,the content of dry matter,crude protein,crude fat,crude fiber and calcium in heavy-metal-resistant forage mulberry were higher,and the gross energy of them have no difference;the gas production of the heavy-metal-resistant forage mulberry experienced fast increase and slow increase to steady stage while for the compound concentrate for cattle,we observed three stages as slow increase,fast increase and steady stage,at 12 h and 24 h fermentation time,the cumulative gas production of the heavy-metal-resistant forage mulberry was significantly higher than that of the compound concentrate for cattle,the pH of Heavy-metal-resistant forage mulberry were 5.41 and 5.55,while that of cattle concentrate were 4.63 and 4.78 at 12 h and 24 h,indicating that the negative effect of heavy-metal-resistant forage mulberry on the pH of rumen fluid was significantly smaller than that of cattle concentrate;the in vitro dry matter digestibility of the heavy-metal-resistant forage mulberry was significantly lower while the content of microbial protein concentration and ammonia were significantly higher than that of the Heavy-metal-resistant forage mulberry;at 12 h,the content of the total volatile fatty acid of the Heavy-metal-resistant forage mulberry and the compound concentrate for cattle were 87.64 mmol/L and 108
