胡萝卜西兰花复合蔬菜纸生产工艺及配方研究

摘　　要：以胡萝卜和西兰花为原料,以羧甲基纤维素钠(CMC-Na)、可溶性淀粉作为胶黏剂,在单因素试验的基础上,采用正交试验法确定胡萝卜西兰花复合蔬菜纸的最佳工艺参数。结果表明,蔬菜纸最佳生产工艺及配方条件为西兰花和胡萝卜最佳质量配比3∶2,羧甲基纤维素钠(CMC-Na)添加量1.0%,可溶性淀粉添加量6.0%。在此条件下制得的复合蔬菜纸色、香、味、形俱佳,具有广阔的市场发展前景。With carrot and broccoli as raw materials,sodium carboxymethyl cellulose(CMC-Na)and soluble starch as thickener,orthogonal test method was used to determine the optimum process parameters of carrot and broccoli composite vegetable paper on the basis of single factor.The results showed that the optimum production technology and formula of the vegetable paper were broccoli and carrot with the best quality ratio of 3∶2,the addition amount of carboxymethyl cellulose sodium(CMC-Na)1.0%,and the addition amount of soluble starch 6.0%.Under this conditions,the paper of compound vegetable was good in color,aroma,taste and shape.
