摘  要:本试验旨在探讨日粮添加不同水平的硫辛酸对肉鸡生长性能及肉质的影响。试验选择384只1日龄肉仔鸡,随机分为4组,每组4个重复,每个重复24只。各组分别饲喂基础日粮添加0、200、400和800 mg/kg硫酸锌的饲料。结果:日粮硫辛酸添加水平达到400和800 mg/kg时,肉鸡的采食量和料重比显著降低,分别较对照组降低了7.09%和8.22%(P<0.05),而料比也分别降低了3.70%和2.16%(P<0.05)。日粮硫辛酸添加水平为400~800 mg/kg时,腹脂重量较0和200 mg/kg硫辛酸组显著降低(P<0.05),但当以胴体重量占肉鸡活体重百分比计算时,对照组和硫辛酸处理组对腹脂率的影响无显著差异(P>0.05)。日粮添加硫辛酸较对照组滴水损失分别显著降低了30.95%、32.14%和34.52%(P<0.05)。对照组肌肉胶原蛋白含量表现最高(P<0.05),而800 mg/kg硫酸锌组胶原蛋白含量表现最低(P<0.05)。结论:肉鸡日粮添加200~400 mg/kg硫辛酸可以抑制肌肉脂肪沉积,降低屠宰早期肌肉糖原含量,提高肌肉系水力,而对肌肉产量无负面影响。The purpose of this study was to investigate the effects of different levels of lipoic acid on growth performance and meat quality of broilers.3841-day-old broilers were randomly divided into 4 groups with 4 replicates per group and 24 broilers per replicate.Each group was fed with basal diet supplemented with 0,200,400 and 800 mg/kg zinc sulfate,respectively.Results:When the dietary lipoic acid level reached 400 and 800 mg/kg,the feed intake and feed weight ratio of broiler chickens decreased significantly,by 7.09%and 8.22%,respectively,compared with the control group(P<0.05),and the feed ratio also decreased by 3.70%and 2.16%,respectively(P<0.05).When the dietary lipoic acid level was 400~800 mg/kg,the abdominal fat weight was significantly lower than that of the 0 and 200 mg/kg lipoic acid groups(P<0.05),but there was no significant difference between the control group and the lipoic acid treatment group in terms of the percentage of carcass weight to the live body weight(P>0.05).Compared with the control group,the loss of water drop was significantly reduced by 30.95%,32.14%and 34.52%(P<0.05).The muscle collagen content in the control group was the highest(P<0.05),while the collagen content in the 800 mg/kg zinc sulfate group was the lowest(P<0.05).Conclusion:The addition of 200~400 mg/kg lipoic acid to the diet of broiler chickens can inhibit muscle fat deposition,reduce the content of muscle glycogen at the early slaughter stage,and improve the hydraulic power of muscle,without negative effect on muscle yield.
