摘 要:为快速检测畜禽肉中的铁元素提供方法参考,应用邻菲罗啉分光光度法对市场上常见的6种不同种类畜禽肉及肝脏中的铁元素含量进行测定。结果表明:邻菲罗啉分光光度法最佳测定波长510 nm,显色剂邻菲罗啉用量1.00 mL,显色反应时间15 min,HAc-NaAc缓冲溶液pH为5.00,10%盐酸羟胺溶液用量1.00 mL;该方法检测6种不同种类畜禽肉中铁元素含量在13.46~477.93 mg/kg,畜禽肝脏中的铁含量远高于其肉类。用邻菲罗啉分光光度法测定畜禽肉中铁含量的方法简便快速、重复性好、灵敏度高。The iron content in meat and liver of six livestock and poultry on market is determined by using o-phenanthroline spectrophotometric method to provide a method reference for rapid detection of iron content in livestock and poultry meat.Result:The optimum conditions of o-phenanthroline spectrophotometric method for determining iron content in livestock and poultry meat include 510 nm wavelength,1.00 mL phenanthroline as chromogenic reagent,15 min coloring reaction time,pH 5.00 HAc-NaAc buffer solution,and 1.00 mL 10%hydroxylamine hydrochloride solution.The iron content in meat of six livestock and poultry determined by o-phenanthroline spectrophotometric method under the optimum condition is 13.46-477.93 mg/kg,and the iron content in liver of six livestock and poultry is much higher than that of meat in six livestock and poultry.In conclusion,the iron content in meat of livestock and poultry determined by o-phenanthroline spectrophotometric method has the advantages of simplicity,rapidness,good repeatability and high sensitivity.
