摘  要:采用硫脲复合溶剂体系溶解马铃薯淀粉(PS),通过水提醇沉法分离提纯后,烘箱干燥制备再生冷水可溶性淀粉(RCWSS-T)。结果表明:硫脲复合溶剂体系所得的RCWSS-T冷水溶解度达到43.50%;FTIR分析表明该体系制备RCWSS-T过程中没有新的化学键生成;XRD结果表明PS的晶体结构由最初的双螺旋B型变为RCWSS-T的单螺旋V型;SEM分析表明其颗粒尺寸明显减小。与尿素复合溶剂体系相比,硫脲复合溶剂体系下所得RCWSS-T的冷水溶解度更低,其原因可能是硫脲削弱淀粉分子间及分子内氢键的能力不如尿素,与淀粉形成氢键的稳定性也不如尿素。The regenerated cold-water-soluble starch(RCWSS-T) was prepared by dissolving potato starch(PS) using the thiourea composite solvent system. RCWSS-T was separated and purified by the water-extraction and alcohol-precipitation method, followed by the drying in the oven. The cold-water solubility was improved to be 43.50% for the obtained RCWSS-T.Results of FTIR analysis indicated that no new chemical bond was formed during the preparation period of RCWSS-T. XRD results showed that the crystal structure changed from the original double helix B type in PS into the single helix V type in RCWSS-T. SEM analysis confirmed that RCWSS-T exhibited much smaller particle size than PS. However, compared to the urea composite solvent system, the thiourea composite solvent system led to RCWSS-T with lower cold-water solubility. The possible reason is that thiourea has the less ability than urea to weaken the intermolecular and intramolecular hydrogen bonds in starch, and the hydrogen bonds formed between thiourea and starch are also less stable than the ones in the case of urea.
