摘 要:【目的】探究不同浓度的亚硒酸钠溶液浸种处理对豇豆果实品质和活性氧的影响.【方法】在(25±1)℃条件下,将‘美国无架豇豆’在0、2、4、6、8 mg/L的亚硒酸钠溶液中浸种9 h,每隔3 h换1次溶液.按常规方法种植,在果实挂果约40 d时取样,测定果实品质等生理指标.【结果】适量亚硒酸钠溶液处理可极显著地提高豇豆的可溶性蛋白质、维生素C、可溶性糖含量,随着亚硒酸钠溶液浓度的升高,这3种物质含量呈峰型变化,当溶液浓度为4 mg/L时达到峰值;不同浓度的亚硒酸钠溶液处理均极显著地提高了豇豆的抗坏血酸过氧化物酶(APX)、超氧化物歧化酶(SOD)、过氧化物酶(POD)、过氧化氢酶(CAT)活性,随着溶液浓度的提高,酶活性呈先升后降趋势,当溶液浓度为6 mg/L时达到最大值,但高浓度的亚硒酸钠处理(8 mg/L)对SOD活性的增加并无抑制作用;不同浓度的亚硒酸钠溶液处理均降低了豇豆中O2-·生成速率和H2O2、丙二醛(MDA)、硝酸盐含量,整体表现为先降后升,溶液浓度为4 mg/L时达到最小值.【结论】不同浓度亚硒酸钠溶液浸种对豇豆品质和活性氧有不同程度的影响,其中4 mg/L亚硒酸钠溶液处理的豇豆品质最佳,6 mg/L亚硒酸钠溶液处理的豇豆抗氧化能力最强,为提高豇豆品质提供了依据.【Objective】To explore the effects of different concentrations of sodium selenite solution on the quality of cowpea fruit and active oxygen.【Method】Under the condition of(25±1)℃,soak the seeds of‘American cowpea’in 0,2,4,6,8 mg/L sodium selenite solution for 9 h,and change the solution every 3 h.Plant according to the conventional method,take samples when the fruit is about 40 days old,and determine the physiological indicators such as fruit quality.【Result】The content of soluble protein,vitamin C and soluble sugar of cowpea could be significantly increased by appropriate amount of sodium selenite solution.With the increase of sodium selenite solution concentration,the content of these three substances showed a peak type change,reaching the peak when the solution concentration was 4 mg/L;The activity of aseorbate peroxidase(APX),superoxide dismutase(SOD),peroxidase(POD)and catelase(CAT)of cowpea was significantly increased by different concentrations of sodium selenite solution.With the increase of solution concentration,the enzyme activity first increased and then decreased.When the solution concentration was 6 mg/L,the enzyme activity reached its maximum value.However,high concentration sodium selenite treatment(8 mg/L)had no inhibitory effect on the increase of SOD activity.Treatments with different concentrations of sodium selenite solution reduced the rate of O2-·generation and the content of H2O2,malondia ldehyde(MDA),and nitrate in cowpea.The overall performance was first decrease and then increase,reaching the minimum when the solution concentration was 4 mg/L.【Conclusion】Different concentrations of sodium selenite solution had different effects on the quality of cowpea and reactive oxygen species,among which the cowpea treated with 4 mg/L sodium selenite solution had the best quality,while the cowpea treated with 6 mg/L sodium selenite solution had the strongest antioxidant capacity.The research results provided basis for improving the quality of cowpea.
