摘 要:【目的】旨在比较兴国灰鹅及兴国灰鹅与扬州鹅杂交后代鹅的生产性能,为优质灰鹅杂交配套组合的选育提供一定的理论依据。【方法】以兴国灰鹅为父本,扬州鹅为母本,比较分析兴国灰鹅与杂交F1代鹅一个产蛋周期的产蛋性能,测定兴国灰鹅与杂交F2代鹅0~70日龄的生长性能、屠宰性能和肉用性能。【结果】(1)杂交F1代鹅平均产蛋数比兴国灰鹅高20枚,孵化率比兴国灰鹅提高了20%以上。(2)杂交F2代鹅平均料肉比低于兴国灰鹅。(3)兴国灰鹅公、母鹅腹脂率显著高于杂交F2代鹅(P<0.05),兴国灰鹅公鹅胸肌率显著高于杂交F2代鹅(P<0.01)。(4)兴国灰鹅与F2代鹅胸、腿肌pH值、肉色亮度(L^*)和黄度(b^*)、水分、粗蛋白含量均无显著差异(P>0.05),兴国灰鹅公鹅胸肌及公、母鹅腿肌失水率均显著大于F2代鹅(P<0.05)。F2代鹅的胸、腿肌肌内脂肪含量显著低于兴国灰鹅(P<0.05)。(5)兴国灰鹅与F2代鹅肌肉中总氨基酸、必须氨基酸和非必须氨基酸含量无显著差异(P>0.05),兴国灰鹅公鹅胸肌中的鲜味氨基酸含量显著高于F2代鹅(P<0.05),但腿肌中鲜味氨基酸含量显著低于F2代鹅(P<0.05)。(6)兴国灰鹅与F2代鹅肌肉中多不饱和脂肪酸、单不饱和脂肪酸、饱和脂肪酸含量差异不显著(P>0.05),兴国灰鹅肌肉中亚麻酸含量显著低于杂交F2代鹅。【结论】兴国灰鹅与扬州鹅级进杂交F2代鹅既发挥了扬州鹅产蛋性能优良的特性,又基本上保持了兴国灰鹅的优良肉质特性。[Objective]This experiment was conducted to determine and compare the growth performance;meat performance between Xingguo grey goose and the hybrid offspring of Xingguo grey goose(♂)and Yangzhou goose(♀).[Method]The laying performance of Xingguo grey goose and F1 generation goose during one laying period was investigated.120 one-day-old healthy geese of Xingguo grey geese and F2 generation geese(half male and half female)were fed with the same diet,the experiment lasted for 70 days.1-10 week-old weight gain,10-week-old slaughter performance and meat quality of their hybrid offsprings were determined.[Result]The results showed as follows:(1)The egg yield,fertile eggs of F1 generation geese were significantly higher than those of Xingguo grey geese.(2)The average feed:gain ratio of hybrid F2 generation geese was significantly higher than that of Xingguo grey geese.(3)The abdominal fat percentage of hybrid F2 generation geese was significantly higher than that of Xingguo grey geese,and the breast muscle ratio of male Xingguo grey geese was significantly higher than that of hybrid F2 generation geese(P<0.01).(4)There was no significant difference in the pH value,value of L^* and b^*,crude moisture(CM),and crude protein between Xingguo grey geese and hybrid F2 generation geese(P>0.05),while the 1 h water losing rate,the value of a^* and crude fat(CF)in Xingguo grey geese were significantly higher than those of hybrid F2 generation geese(P<0.05).(5)There were no significant difference in the total amino acids contents,essential amino acid contents,noressential amino acids between Xingguo grey geese and hybrid F2 generation geese(P>0.05),the content of delicious amino acid(DAA)in the breast muscle of Xingguo grey geese was significantly higher than that of hybrid F2 generation geese(P<0.05),and significantly lower than that of hybrid F2 generation geese in leg muscle(P<0.05).(6)No significant differences were observed in the contents of polyunsaturated fatty acid,monounsaturated fatty acid,saturated fatty acid betwe
