摘　　要：介绍了商用洗碗机的结构、分类、特点和其专用清洁剂的分类、产品组成、要求,阐述了商用洗碗机能够做到清洁消毒的原因,并对商用洗碗机和专用清洁剂的发展方向做了一些分析。The article introduced some different commercial dishwasher types,the detergent categories,components and regulation,explained how commercial dishwashers and detergents clean and sanitize tableware,and discussed the trends of commercial dishwashers and the detergents in the future,which was hoped to provide some reference for the development of commercial dishwasher detergent.
