河南省弱筋小麦产业化发展存在的问题及建议

摘　　要：弱筋小麦是指用来制作饼干、蛋糕、糕点类食品的专用小麦,要求蛋白质和湿面筋含量低。与强筋小麦相比,河南省弱筋小麦的产业化发展水平明显滞后。从发展现状看,河南省研究、生产、加工弱筋麦的全产业链已初步形成,但在弱筋小麦品种选育、栽培技术、规模化生产、优质优价、精深加工等方面仍存在诸多问题。本文在分析河南省弱筋小麦产业化发展现状及存在的问题的基础上,借鉴河南省强筋小麦发展经验,提出加快河南省弱筋小麦发展建议,包括加强品种选育、深入研究高产优质栽培技术、壮大弱筋小麦商品粮基地、加强弱筋粉加工利用研究、培养龙头企业等方面内容,以期为促进河南省弱筋小麦产业快速发展提供参考。Weak gluten wheat is suitable for the produce of biscuits,cakes and Chinese southern steamed bread,which require low content of protein and wet gluten in flour.Compared with strong gluten wheat,the industrialization of weak gluten wheat obviously lags in Henan Province.From the view of development status,the whole industry chain of research,production and processing of weak gluten wheat in Henan Province has been preliminarily formed.However,there are still many problems need to be solved in the variety breeding,cultivation technique,large-scale production,economic efficiency,deep processing,etc.Based on the situation and problems of industrialization of weak gluten wheat in Henan Province,learning from experience of industrialization of strong gluten wheat,this paper put forward several suggestions to accelerate the development of industrialization of weak gluten wheat in Henan Province,including strengthening the breeding of varieties,studying the yield and quality cultivation technology,expanding planting scale,enhancing the study of processing and utilization,cultivating the corporate champion.
