摘 要:以新疆伊犁新源县的10个单株野生欧洲李(Prunus domestica L.)果实为研究对象,观测果实外观品质,用滴定法、指示剂法、紫外分光光度计法等测定果实内在品质指标并进行分析。结果表明,供试新疆野生欧洲李平均单果重为6.56 g,果形较整齐,多为卵圆形、紫红色。10个不同单株,平均鲜果重、平均果核重等11项指标均存在一定程度差异,可食率与鲜果重呈极显著相关(P<0.01)。果实中总糖、还原糖、维生素C、可滴定酸含量与果肉中总酚、花青素含量分别为8.88%~21.11%,10.90%~14.10%,4.09~8.83 mg/100g,3.08~18.76 g/L,0.25~0.54 mg/g,0.03~0.20 mg/100g。总糖、还原糖、维生素C、总酚、花青素含量均存在一定程度差异,还原糖与花青素含量呈极显著相关(P<0.01),维生素C与可滴定酸含量呈极显著相关(P<0.01)。野生欧洲李果实可食率达到86%,具有开发利用价值。In order to master the quality characteristics of the Prunus domestica L.ten individual Prunus domestica L.from Xinyuan County,Ili Prefecture,Xinjiang were taken as the research object to observe the exterior quality of the fruit,and the internal quality indexes of the fruit were determined and analyzed by titration,indicator and ultraviolet spectrophotometer.The results showed that the average individual fruit weight of Prunus domestica L.was 6.56 g,and the fruit shape was neat,mostly oval and purplish red.The average fresh fruit weight,average kernel weight and other 11 indexes of 10 different individual plants were different to some extent,and the edible rate was significantly correlated with the fresh fruit weight(P<0.01).The contents of total sugar,reducing sugar,vitamin C,titratable acid,total phenol and anthocyanin in fruit were 8.88%-21.11%,10.90%-14.10%,4.09-8.83 mg/100g,3.08-18.76 g/L,0.25-0.54 mg/g,0.03-0.20 mg/100g.The contents of total sugar,reducing sugar,vitamin C,total phenol and anthocyanin were all different to some extent.The reducing sugar was significantly correlated with the content of anthocyanin(P<0.01),while the vitamin C was significantly correlated with the content of titratable acid(P<0.01).Prunus domestica L.was a wild drupe with small fruit and edible rate of over 86%,which proves that it has certain development and utilization value.
