摘　　要：乳汁是自然界最完美的食物,牛奶品质调控技术主要是为消费者最大程度的保留牛奶的生物活性物质。本文主要就影响生乳品质的奶牛品种、生理阶段、日粮营养、饲养管理和疫病因素,影响乳品品质的乳品加工方式、冷链运输和储存方式进行论述,以期为提高和优化牛奶品质提供技术支持。Milk is the most perfect food in nature.Milk quality control technology is mainly to retain the bioactive substances of milk to the greatest extent for consumers.This paper mainly discussed the dairy cattle varieties,physiological stages,diet nutrition,feeding management and epidemic factors that affect the quality of raw milk,as well as the processing mode,cold chain transportation and storage mode that affect the quality of dairy products,so as to provide technical support for improving and optimizing the milk quality.
